Gluten sensitivity (also called non-celiac gluten sensitivity or non-celiac wheat sensitivity) is a real medical condition which affects approximately 6% of the population to some degree. A recent study suggests that it affects similar numbers to those with celiac disease -- approximately 3 million in the US alone. Other experts speculate the numbers are actually much higher.

 Dr. Alessio Fasano  is a world-renowned pediatric gastroenterologist, research scientist and entrepreneur. He's basically the GOAT of celiac disease research. He's the chief of Pediatric Gastroenterology and Nutrition at Mass General for Children (MGfC). Dr. Fasano also directs the Center for Celiac Research, specializing in the treatment of patients of all ages with gluten-related disorders, including celiac disease, wheat allergy and gluten sensitivity.
